Estate Vermouth from Central Otago
For now, our vermouths can be delivered only within New Zealand.
Prophet’s Rock Red Vermouth – Pinot Noir 2024
Vibrant ruby red in colour with a pale rose rim. Complex and layered aromatics include a range of spices from cinnamon and nutmeg to five-spice, dried herbs, deep cherry, violets and rose.
The warm, structured, and rich palate shows cherries, rosehip, orange zest, and liquorice nestled amongst many other spices and woody notes. The body and richness are wonderfully balanced by the structure of the Pinot Noir and the woody tinctures, notably a hint of the endemic Horopito and wormwood on the finish.
This Vermouth is delicious on its own, as an adjunct to the end of a meal with cheeses or desserts, or to upgrade your favourite cocktail.
ABV: 17%
Prophet’s Rock White Vermouth – Pinot Gris 2024
White gold in colour with very pale lime green tinge. This beautifully perfumed White Vermouth unfolds with a complex aromatic profile that includes an array of florals, citrus, Provençal herbs, and a range of spices
from star anise to clove.
The palate leads with citrus along with an underlay of spices, and ripe pears coming from the Pinot Gris. The palate is focussed and driven, with freshness, energy, warmth, and richness of flavour, all underpinned by a subtle briny salinity. Very complex and textured, this Vermouth evolves and unfolds in the glass, utterly beguiling.
Enjoyable on its own, as an aperitif, a post-meal digestive, or in your favourite cocktails.
ABV: 18%
Prophet’s Rock Vermouth –
The Pair, Red & White 2024
Both vermouths in a single purchase.
The White is the one to open on: perfumed and citrus-led, driven by freshness with a subtle briny edge. The Red is the after-dinner pour: warm and structured, with cherry, rosehip, orange zest and the wormwood on the finish. One starts the evening, the other sees it out.
Pour either cold over ice with a twist, or build them into your favourite cocktails.
How to serve
Our Estate Vermouths are complete enough to drink on their own, chilled or over ice, as an aperitif or after a meal. They’re a delight alongside cheese or dessert.
Red Negroni (Prophet’s Rock Variant)
- 1 part gin, ideally a straight London Dry rather than anything too assertive on the botanicals. Fords works well.
- 1 part Pampelle, the ruby grapefruit aperitif from Corsica. Using this in place of Campari is what makes the drink.
- 1 part Prophet’s Rock Red Vermouth
Build over the largest ice cube you have. Express a piece of grapefruit peel over the top and drop it in.
Manhattan (Prophet’s Rock Variant)
- 2 parts Armagnac
- 1 part Prophet’s Rock Red Vermouth
Stir over ice until properly chilled, then strain into a cocktail glass, or a small brandy balloon. Garnish with a maraschino cherry, ideally a Luxardo.
White Negroni (Prophet’s Rock Variant)
- 1 part gin, ideally a straight London Dry
- 1 part Luxardo Bitter Bianco
- 1.5 parts Prophet’s Rock White Vermouth
Build over a large ice cube with a piece of expressed grapefruit peel. For something softer, stir over ice and strain instead.
Martini
The White Vermouth holds a classic Martini without adjustment, and the ripe pear and salinity give it real presence.
Aromatic Boost G&T
A double of gin, a single of Prophet’s Rock White Vermouth, topped with tonic and a lemon garnish. It lifts an ordinary gin and tonic more than you would expect.
White Vermouth Spritz
A generous measure of the White Vermouth over ice, topped with soda, and slices of citrus.
